Fermentation and Ethanol

Principles of Fermentation Technology

Principles of Fermentation Technology
This second edition has been thoroughly updated to include recent advances fermentation and ethanol and developments in the field of fermentation technology, focusing on industrial applications. The book now covers new aspects such as recombinant DNA techniques in the improvement of industrial micro-organisms, fermentation and ethanol and includes comprehensive information on fermentation media, sterilization procedures, inocula, fermentation and ethanol and fermenter design. Chapters on effluent treatment fermentation and ethanol and fermentation economics are also incorporated. The text is supported by numerous clear, informative diagrams. The book is of great interest to final year fermentation and ethanol and post-graduate students of applied biology, biotechnology, microbiology, biochemical fermentation and ethanol and chemical engineering. Handbook of Food and Beverage Fermentation Technology

Handbook of Food and Beverage Fermentation Technology
Handbook of Food fermentation and ethanol and Beverage Fermentation Technology studies a wide range of starter cultures fermentation and ethanol and manufacturing procedures for popular alcoholic beverages fermentation and ethanol and bakery, dairy, meat, cereal, soy, fermentation and ethanol and vegetable food products. The text focuses on the quality of the final food product fermentation and ethanol and flavor formation, as well as new advances in the development of starter cultures for dairy fermentations using recent examples that depict the main species used, their characteristics, fermentation and ethanol and their impact on the development of other fermented foods. It is a valuable resource for food scientists, technologists, microbiologists, toxicologists, fermentation and ethanol and processors. Copyright (C) Muze Inc. 2005. For personal use only. Ethanol fermentation - Ethanol fermentation is a form of anaerobic respiration used primarily by yeasts when oxygen is not present in sufficient quantity for normal cellular respiration, the cellular energy-producing system, to continue.

Cellulosic ethanol - Cellulosic ethanol is a blend of normal ethanol that can be produced from a great diversity of biomass including waste from urban, agricultural, and forestry sources. There are at least two methods of production of cellulosic ethanol - enzymatic hydrolysis and synthesis gas fermentation.

Zymase - Zymase is a enzyme complex that catalyze glycolysis, the fermentation of sugar into ethanol and carbon dioxide. As the conversion takes place, the reaction will gradually slow down.

Fermentation - In its strictest sense, fermentation (formerly called zymosis) is the anaerobic metabolic breakdown of a nutrient molecule, such as glucose, without net oxidation. Fermentation does not release all the available energy in a molecule; it merely allows glycolysis (a process that yields two ATP per glucose) to continue by replenishing reduced coenzymes.
